The Gingerbread doubloons from the higher level skyways have stronger summons. The doubloon I got from Westminster Skyway summoned a blue version of the Gingerbread Raider that did about 300 damage...

So far I've gotten Cookie Crumbler and Cookie Cruncher. The next badge is called Cookie Crusher and requires you to defeat 1000 Gingerbread Raiders.
